As the title says, is there a way or has somebody figured out how? I can do that in windows with midi mixer but that would require ...windows... I'm trying to have each fader tied to a separate channel, so for example, fader 1 would be main output , 2 whatever was in focus like a game, 3 discord, 4 media

Probably the easiest way would be to create a daemon that runs on boot to read incoming MIDI signals, looking for specific ones bound to your system volume controls. Unsure if there is an app for this already.
There is this https://github.com/tearoww/midi-mixer but its is not useable at least for my needs, having to rebind every time is not ideal and it seems to be abandoned
